This widely loved dish is where Olive Oil de Fino all started. Check out the homepage for the full story!

This is a household favorite and is always the first thing to go!

Ingredients:

1 cup Olive Oil de Fino
1 large white onion
10 large mushrooms sliced
1/2 cup parmesan cheese grated
10 cloves minced garlic
1 tablespoon sweet basil
1 tablespoon Italian seasoning
1 pound angel hair pasta
1 teaspoon pepper
2 teaspoons salt

Instructions:

Cook pasta al dente. Rinse, drain and set aside in pot. In large skillet on Medium/High heat sautée mushrooms, onion, garlic, salt, pepper and herbs in Olive Oil de Fino until onions are almost clear. Combine olive oil mixture with pasta. Serve with freshly grated cheese.

This bruschetta makes a wonderful appetizer for parties and can be served with any of my other pasta dishes.

This bruschetta makes a wonderful appetizer for parties and can be served with any of my other pasta dishes.

Ingredients:

Mo Betta Bruschetta is the perfect Italian finger food.

  • 1/4 cup Olive Oil de Fino

  • 1 loaf of hearty bread sliced in half lengthwise. 

  • 4 tbsp. basil pesto

  • 6 Roma tomatos, diced

  • 1 cup fresh grated asiago cheese

Instructions:

Lay out bread onto a baking sheet and spread pesto on top of both slices.
Top with diced tomatos and cover with cheese. Cover tops with Olive Oil de Fino.

Bake at 350 for 20 minutes or until edges are golden brown.  Allow to cool for 5 minutes, slice and serve.

Shrimp Pasta with Vermicelli


This shrimp pasta dish is easy and delicious.  It is great as a main course and will make you look like a true Italian chef.  Enjoy.......

Ingredients:

Shrimp Pasta is delicious summer pasta alternative.

  • 1/2 c. Olive Oil de Fino
  • 1 lb Vermicelli pasta
  • 1 cup pasta water reserve
  • 2 lbs shrimp
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp lemon pepper
  • 3/4 tbsp. onion powder
  • 12 cloves of garlic finely diced
  • 1/4 c. red wine (I just use whatever I have opened)
  • 1/2 c. asiago cheese - grated fresh

Instructions:

Cook pasta al dente. Reserve water, drain the rest, cover pasta to keep warm and set aside.  In large fry pan, heat Olive Oil de Fino on high, add garlic and cook until golden. Stir in the shrimp to coat all pieces for about 3 minutes. Pour in the wine and remaining seasoning. Bring it to a quick boil, turn off the heat and let sit covered for 10 minutes. Fold all this into the vermicelli. Serve with grated asiago cheese.

Marinara Sauce with Meat


This is my own marinara sauce recipe.  It is light and fresh and will "WOW" you and your family and friends.  You can substitute chicken for the Italian sausage if you prefer.

This is my own marinara sauce recipe.  It is light and fresh and will "WOW" you and your family and friends.  You can substitute chicken for the Italian sausage if you prefer. 

This recipe for marinara sauce is a family favorite.

Ingredients:

1/2 cup Olive Oil de Fino
2 tbsp minced garlic
1 pkg sweet Italian sausage, sliced (about 1 1/4 lbs)
1 medium yellow onion, diced
1 large red bell pepper, diced
1 tbsp Italian seasoning
1 heaping tbsp dried sweet basil
1 tbsp sugar
1/2 tsp black pepper
1/2 tsp salt
2 cups sliced mushrooms
1/4 cup wine, white or red
4 tbsp capers
2 - 28oz canned whole tomatoes

Instructions:

In a blender puree tomatoes on high. Set aside. In a large skillet over meduim-high heat brown sausage in Olive Oil de Fino. Stir in garlic, bell pepper, yellow onion, spices and herbs. Cook about 5 minutes. Add mushrooms, capers, and wine. Stir to incorporate. Pour in pureed tomatoes, cover and bring to a boil. Lower heat and simmer for 10 minutes. Server over angel hair pasta, top with freshly grated cheese.

Bowtie Spring Salad


This is a tasty dish best served chilled.  It can be served as a side to a main dish.

This is a tasty dish best served chilled.  It can be served as a side to a main dish. 

Ingredients:

I love this recipe because it's so versatile and can be served hot or cold.

1/4 cup Olive Oil de Fino
1 lb. bowtie pasta, cooked al dente, rinsed and set aside in a large bowl.
1 small can of shoe peg corn
1-15 oz. can black beans, rinsed and drained
1 medium yellow bell pepper, diced
1 meduim red bell pepper, diced
1/4 cup sun dried tomatoes, diced
1-6 oz. can of pitted black olives, cut in half
1/2 tsp.course black pepper
1/8 tsp. cayenne pepper
salt to taste

Instructions:

Take your large bowl of bowtie pasta and add all remaining ingredients.  Stir to incorporate, Drizzle Olive Oil de Fino over the top.  Stir again to incorporate. Let chill for 3 hours before serving.

Makes for a healthy yet hearty meal

Ingredients:

You can add chicken or fish for a protein boost!

4 cups baby leaf spinach
4 cups romaine lettuce cut
1/2 red onion sliced
1 cucumber sliced
3 roma tomatoes sliced
1/2 cup mushrooms sliced
1/2 cup feta cheese

salt and pepper to taste
1 tablespoon sweet basil
1/4 cup Olive Oil de Fino
1/8 cup balsalmic vinegar

Instructions:

Mix all ingredients in a large bowl, toss and serve
