Marinara Sauce with Meat
This is my own marinara sauce recipe and it comes together in minutes! It is light and fresh and will "WOW" you and your family and friends. You can substitute chicken for the Italian sausage if you prefer.

Marinara Sauce
A light, fresh sauce that will “WOW” your family and friends
Ingredients
½ cup Olive Oil de Fino
2 tbsp minced garlic
1 medium yellow onion, sliced
1 large red bell pepper, sliced
1 tbsp Italian seasoning
1 heaping tbsp dried sweet basil
½ tsp black pepper
½ tsp salt
2 cups sliced mushrooms
¼ cup red wine (use one you would drink)
4 tbsp capers
2 (28 oz) cans whole tomatoes

Instructions
In a blender, puree the whole tomatoes on high until smooth. Set aside.
In a large skillet, heat Olive Oil de Fino over medium heat.
*Optional: If using meat, brown 1 to 1¼ lbs sweet Italian sausage (or substitute chicken) in the oil before proceeding.
Add the garlic, diced onion, and red bell pepper. Sauté for about 5 minutes, until softened and fragrant.
Stir in the Italian seasoning, basil, black pepper, and salt.
Add the mushrooms, capers, and red wine. Stir to combine.
Pour in the pureed tomatoes. Cover and bring to a gentle boil.
Reduce heat and let simmer for about 10 minutes, allowing the flavors to come together.

Serve over angel hair pasta and finish with freshly grated pecorino Romano cheese.
