Shrimp Pasta with Vermicelli
This shrimp pasta dish is easy and delicious. It is great as a main course and will make you look like a true Italian chef.
Ingredients:
- 1/2 c. Olive Oil de Fino
- 1 lb Vermicelli pasta
- 1 cup pasta water reserve
- 2 lbs shrimp
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp lemon pepper
- 3/4 tbsp. onion powder
- 12 cloves of garlic finely diced
- 1/4 c. red wine (I just use whatever I have opened)
- 1/2 c. asiago cheese - grated fresh
Instructions:
Cook pasta al dente. Reserve water, drain the rest, cover pasta to keep warm and set aside. In large fry pan, heat Olive Oil de Fino on high, add garlic and cook until golden. Stir in the shrimp to coat all pieces for about 3 minutes. Pour in the wine and remaining seasoning. Bring it to a quick boil, turn off the heat and let sit covered for 10 minutes. Fold all this into the vermicelli. Serve with grated asiago cheese.
